Our Founder Bill Papathomas has been involved in cafés since he arrived in Australia from his homeland Greece. Since then he hasn’t missed a day at the shop, pouring coffee and making people laugh with his sense of humour and passion in giving people a truly authentic European cafe experience.

The Rossini story started in the Sydney CBD in the year 1967 at the Qantas building in George Street, Sydney. It soon became a destination frequented by the bustling business district and working class.

In 1978 it moved to Australia Square where the flagship store is still located today, making it one of the longest running and established Cafés within the Sydney region. It has since evolved in it’s offering with the addition of Bill’s famous Porchetta roast and large variety of fresh pastas, salads, pastries and authentic European street food.

In 2008, the second Rossini store located in the busy Chatswood was launched and managed by Thomas (Bill's Son). This store soon became a destination that attracted locals and shoppers with its unique food offering and customer experience. 

In 2018, it was time to put growth plans into fruition with the new Rossini Rosebery store that would become the official HQ of the group. This was the brainchild of Thomas (Bill's Son). It is home to a state of the art wholesale kitchen and retail space serving Breakfast, Lunch & Dinner with a dedicated patisserie section and dine in menu headed by internationally renowned chef Bektas.
